Burrito Bowl - A Whole Food Recipe

 

Nourishing and tasty Burrito Bowl. Packed with whole foods like veggies, brown rice, black beans, and drizzled with an olive oil lime dressing. Make this bowl in 25 minutes or less and customize it by adding vegetables you already have in your refrigerator.

 

CAN YOU ADD ADDITIONAL INGREDIENTS?

One of the great things about this recipe is that you can get really creative with adding additional vegetables and protein to your bowl. I personally think it's a great way to use any type of vegetable that you have in your refrigerator that is about to go bad.

Below are some other ingredients I would recommend:

VEGETABLES

  • Sweet Potatoes
  • Yukon Potatoes
  • Mushrooms
  • Orange, Yellow, or Green Bell Peppers
  • Zucchini
  • Broccoli
  • Onions

PROTEIN

  • Chickpeas
  • Pinto Beans
  • Tofu
  • Tempeh

 

OLIVE OIL & LIME DRESSING

This dressing is light, flavorful, and simple to make. In a bowl combine lime juice, olive oil, salt, pepper, and garlic powder. Whisk together until combined. It's so easy and can be customized with other dried herbs.

 

CAN YOU USE DIFFERENT DRESSING?

The dressing options for this salad are endless!

Don't want to make your own dressing? No worries, just use store bought dressing that you already have in your refrigerator. Some dressings that I recommend for this salad are cilantro and lime, or oil and vinegar.

 

CAN YOU MAKE THIS BOWL AHEAD OF TIME?

You absolutely can make this bowl ahead of time. You just don't want to add the dressing to your bowl until you are ready to eat it. Adding the dressing ahead of time will make the veggies soggy.

I personally like to make a large burrito bowl and keep it in the refrigerator. To store the bowl just make sure to keep it in an airtight container while keeping as much air out of it as possible.

INGREDIENTS
  • BURRITO BOWL
    • 1 cup brown rice, cooked according to the back of the package
    • 1 cup black beans, rinsed and patted dry
    • 1 cup cherry tomatoes, chopped
    • 1 cup fresh spinach, chopped
    • 1 avocado, peeled and sliced
    • 1 cup corn, cooked
    • 2 Tbsp red onion, diced into small pieces
  • DRESSING
    • 1 lime, juiced
    • 2 Tbsp olive oil
    • ⅛ tsp salt
    • ⅛ tsp pepper
    • ⅛ tsp garlic powder
  • TOPPING
    • fresh cilantro, chopped
METHOD
  1. In a medium bowl combine the dressing ingredients together and whisk until well combined. Place in the refrigerator to chill.
  2. In a bowl combine the corn and onion together and toss.
  3. Divide the ingredients into two bowls and garnish with fresh cilantro. Drizzle with the dressing and eat.

 

Make it Your Own

Don't want to make your own dressing? Use premade dressing that you already have in your refrigerator. Get creative and add additional vegetables to your bowl. Once you add the dressing to the bowl I recommend eating it within the hour.
