This Fudge Brownie Protein Truffles by @run2food is just incredibly luscious, rich and decadent.
MAKES 8 TRUFFLES
INGREDIENTS
- Almonds, 1 cup
- Cocoa Powder, 2 tbsp
- Vegan Chocolate Protein Powder, 1/4 cup
- Dates, 1 cup (pitted and soaked, reserve 1/4 of the water)
- Vegan Chocolate, 100 g
METHOD
- In a food processor, blitz the almonds until it resembles a fine flour.
- Add in the cocoa powder & protein powder and briefly process to combine.
- Add the the dates and date water and process until the mixture clumps/sticks together. If it doesn’t then you may need to add more liquid
- Form the mixture into 8 evenly sized balls and freeze for 30 mins.
- Melt the chocolate and roll the balls in the chocolate to coat. Return to the freezer for another 15 minutes to set.
