Sweet Potato Donuts with Chocolate Frosting

This donut is a not-so-guilty treat that's free from refined sugars and oils. Can be made using a waffle maker, donut maker or baked in an oven. 

INGREDIENTS

  • DONUTS
    • 1 medium sweet potato (baked in skin)
    • 50g whole wheat flour
    • 50g almond meal
    • 1 tsp cinnamon
    • 1 tsp vanilla extract
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1 aquafaba egg (or regular if not vegan)
    • 2 tbsp olive oil (or coconut)
    • 2 tbsp sweetener of choice (for me erythritol)
    • + as much plant milk as the batter requires
  • CHOCOLATE FROSTING
    • sugar free dark chocolate (melted)
    • 1 tsp coconut oil
METHOD
  1. Add all of the ingredients into a blender and blend until a thick batter forms. ( it needs to be like a pancake batter)
  2. Grease the baking dish or iron and heat up. Bake until the donut’s top is golden brown
  3. Let them cool for 10 minutes, and melt the chocolate int the microwave with the oil. Dip the tops of the donuts into the chocolate ( optionally sprinkle with shredded coconut)
  4. Enjoy!
